Mixed Greens' Salad With Apples And Maple-walnut Oil Dressing Recipe

Ingredients
  • 1/8 tsp cayenne .
  • 2 tsps brown mustard (or Dijon) .
  • 6 c mixed greens, rinsed .
  • 1/2 c walnuts, toasted & sliced .
  • Dressing .
  • 1/8 tsp salt .
  • 2 tbsps maple syrup (NOT imitation) .
  • 2 1/2 tsps walnut oil .
  • 1 c braeburn apples, julienned, cut 2-inches long (can substitute similar apple such as Honey Crisp, etc.) .
  • Garnish .
  • 2 tbsps apple cider vinegar

Directions
  • Step #1 In small glass bowl, prepare salad dressing first & set aside.
  • Step #2 Use salad spinner to remove excess moisture from the greens.
  • Step #3 *In large non-reactive serving bowl place the sliced apples & toss them with a little bit of apple cider to halt oxidizing.
  • Step #4 Next, add the salad greens, a few tbsps of the salad dressing & toss carefully again with tongs to mix.
  • Step #5 Serve remaining salad dressing on side along with the toasted walnuts if using.
  • Step #6 *For best results, cut up apples & toss with the vinegar right before serving.
