Cheese Pasties Recipe

Ingredients
  • 3 tbsps ice water .
  • 1 pinch mace .
  • 1 c butter .
  • 3/4 c sliced turnips .
  • 2/3 c sliced leeks or 1/2 c sliced scallions .
  • Crust .
  • 1/4 tsp black pepper .
  • 1 c sliced celery .
  • Filling .
  • 1 tsp salt .
  • 1 1/3 c sliced carrots .
  • 1/4 tsp cayenne .
  • 3 c flour .
  • 12 oz grated cheddar cheese

Directions
  • Step #1 To make crust: mix salt & flour.
  • Step #2 Cut butter into flour with fingers until it resembles coarse corn meal.
  • Step #3 Sprinkle top on cold water & stir until dough sticks together.
  • Step #4 Form dough into a ball & put in the fridge for 15-30 mins.
  • Step #5 Do not over-chill! To make Filling: Mix together the filling ingredients In a large-ish bowl.
  • Step #6 Preheat oven to 375°F.
  • Step #7 Cut the ball of dough into 6 pieces.
  • Step #8 Roll out each piece about 1/8 inch thick & Cut a 9 inch circle out of each piece.
  • Step #9 Put 1/6 of the filling in the middle of each pastry circle.
  • Step #10 Pull one edge over the filling to make a half-circle.
  • Step #11 Seal the edges together like a turnover.
  • Step #12 Turn the edges over & press with a fork to double-seal.
  • Step #13 Cut slits in the top of the pasties so that steam can escape.
  • Step #14 BAke for 15 mins, then reduce heat to 350 F & bake for another 15-20 mins until lightly golden.
  • Step #15 Remove from oven, & allow the pasties rest for 5 mins before serving.
