Chicken And Papaya Stir-fry Recipe

Ingredients
  • 1/4 tsp crushed red pepper flakes .
  • 1 tsp cornstarch .
  • 1/2 c fresh orange juice .
  • 1 tbsp soy sauce .
  • 1 large garlic clove, minced .
  • 1 tbsp fresh lemon juice .
  • 1 small onion, thickly sliced .
  • 2 tsps soy sauce .
  • 2 tsps dry white wine .
  • 1 large scallion, thinly sliced .
  • 2 ripe papayas, peeled seeded & cut into 3-by-1/2-inch strips (1/2-lb each) .
  • 1 tbsp vegetable oil .
  • 1 poblano chile or red anaheim chili, seeded & thickly sliced .
  • 1 lb boneless skinless chicken breast halves, cut into 1 1/2-inch pieces .
  • 2 tsps minced fresh ginger .
  • salt & freshly ground black pepper

Directions
  • Step #1 In a medium bowl, mix the soy sauce with the wine & cornstarch.
  • Step #2 Add the chicken & turn to coat.
  • Step #3 Heat the oil in a wok or large skillet over moderately high heat.
  • Step #4 Add the onion, ginger & garlic & stir-fry for 30 seconds.
  • Step #5 Add the chicken & stir-fry for 5 mins.
  • Step #6 Add the poblano & crushed red pepper & continue stir-frying until the chicken is cooked through & the poblano softens, about 3 mins.
  • Step #7 Add the soy sauce & stir-fry for 30 seconds.
  • Step #8 Using a slotted spoon, transfer the chicken to a plate.
  • Step #9 Add the orange juice to the wok & boil until slightly thickened, about 3 mins.
  • Step #10 Return the chicken to the wok, add the papaya & stir-fry until hot, about 1 min.
  • Step #11 Add the lemon juice, season this with salt & pepper & transfer to a platter.
  • Step #12 Garnish with the scallion & serve.
