Venison Liver Pate Recipe

Ingredients
  • milk .
  • pumpernickel bread, slices hot toasted .
  • 1/2 c lean bacon, sliced .
  • 2 tbsps butter .
  • 2 eggs, beaten .
  • 1 deer liver .
  • 1 onion, sliced .
  • 1/8 tsp nutmeg .
  • 1/2 tsp fresh ground pepper .
  • 2 slices pumpernickel bread .
  • 1 tsp grated lemon rind .
  • 1/2 c sliced salt pork .
  • 1/4 tsp salt .
  • 8 slices lean bacon

Directions
  • Step #1 Cook the salt pork in a heavy skillet.
  • Step #2 Add onion & cook this until tender.
  • Step #3 Add the butter & half of the liver.
  • Step #4 Cook quickly until brown.
  • Step #5 Cover up & baise genly for 15 mins or until tender.
  • Step #6 Preheat oven to 350°F Meanwhile soak the 2 slices in milk & squeese dry.
  • Step #7 Grind with the braised & remaining liver.
  • Step #8 Stir in everything from the salt to ghe eggs listed above.
  • Step #9 Take a loaf pan & line with the 8 slices.
  • Step #10 Place the liver in, cover with foil wrap & bake for approx 1 1/2 hrs.
  • Step #11 Serve with those toast slices.
