Panettone Cookies Recipe

Ingredients
  • 1/2 c golden raisins .
  • 1 tsp vanilla .
  • 2 large eggs .
  • 1 c packed brown sugar .
  • 1 tsp anise seeds, crushed .
  • 1-2 tbsp finely sliced citron .
  • 1/2 tsp salt .
  • 1/2 c granulated sugar .
  • 2 1/2 c flour .
  • 1/2 c toasted pine nuts, sliced .
  • 1 c butter flavor shortening .
  • 1 tsp baking soda

Directions
  • Step #1 preheat your trusty oven to 375*.
  • Step #2 In a large-ish mixing bowl beat shortening with an electric mixer on medium -high speed for 30 seconds.
  • Step #3 add brown sugar, anise seeds, granulated sugar, baking soda & salt.
  • Step #4 Beat until mixd, scraping down sides of bowl as needed during mixing.
  • Step #5 beat in as much flour as you can with mixer.
  • Step #6 stir in the remaining flour with a spoon -- stir in the raisins, pine nuts, if desired, & citron.
  • Step #7 drop dough by rounded tspoons 1" apart onto an ungreased cookie sheet.
  • Step #8 bake in the preheated oven to 8 mins or until edges are lightly browned.
  • Step #9 transfer to a wire rack to cool.
  • Step #10 TO STORE:.
  • Step #11 place cookies in layers seperated by waxed aper in an airtight container, cover.
  • Step #12 store at about room temp for up to 3 days.
  • Step #13 Freeze up to 3 months.
