Healthy Chicken Enchiladas Recipe

Ingredients
  • 1 tsp olive oil .
  • 2 tsps ground cumin .
  • 1/2 tsp paprika .
  • 1/2 c sliced green chilies .
  • 1 tsp ground cumin .
  • 4 medium tomatoes, cut into pieces .
  • Enchiladas .
  • 1/2 tsp salt .
  • 1 medium onion, sliced .
  • Sauce .
  • 4 small whole wheat tortillas .
  • 4 boneless skinless chicken breast halves (12 oz.) .
  • 1/4 tsp black pepper .
  • 2 tsps chili powder .
  • 2 tsps chili powder .
  • 6 garlic cloves, peeled .
  • 1/2 c shredded fat-free cheddar cheese

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Lightly coat a baking sheet with oil spray.
  • Step #3 Place tomatoes, onion & garlic on sheet.
  • Step #4 Bake 15 mins or until onion & garlic are golden.
  • Step #5 Remove vegetables, cool, & transfer to a mixer.
  • Step #6 Add chili pepper, cumin, salt & pepper, & puree until smooth.
  • Step #7 Set a aside.
  • Step #8 Prepare enchiladas: Combine paprika, cumin, & chili powder, in small bowl.
  • Step #9 Mix in oil & just enough water to form a paste.
  • Step #10 Rube paste on chicke.
  • Step #11 Set chicken aside for 15-30 mins.
  • Step #12 Grill or broil chicken 5 to 7 mins on each side or until juice runs clear when pricked with a fork.
  • Step #13 Cool.
  • Step #14 Cut into thin strips.
  • Step #15 Lay tortillas on a work surface.
  • Step #16 Cover up each with 1/4 of the chicken, 2 tbsps cheese, & 2 tbsps green chile.
  • Step #17 Roll up & place this in a 9 by 13 inch baking pan, seam-side down.
  • Step #18 Cover up with sauce.
  • Step #19 Bake at 350 degrees 17-22 mins or until sauce bubbles.
