Red Pepper And Ginger Marmalade Recipe

Ingredients
  • 2 tsps black pepper .
  • 4 tbsps unsalted butter .
  • 12 medium red bell peppers (about 3 lbs) .
  • 3 tbsps sugar .
  • 3/4 c fresh orange juice .
  • 4 tbsps garlic, minced (about 10 cloves) .
  • 3 medium oranges, zest of, grated .
  • 1/2 c extra virgin olive oil .
  • 1/2 c fresh ginger, coarsely grated

Directions
  • Step #1 Core & seed the peppers, & cut into 1/4" wide lengthwise strips(you should get about 12 c).
  • Step #2 Heat the butter & oil in a heavy flameproof casserole dish.
  • Step #3 Add garlic & ginger, & cook over low heat/flame for about 3 mins.
  • Step #4 Add the peppers, & stir well to coat.
  • Step #5 Mix in the orange zest, sugar, juice, & pepper.
  • Step #6 Stir carefully & cover.
  • Step #7 Cook over medium-low heat,stirring every once in awhile, until the peppers are wilted & their skins are soft, about 25 mins.
  • Step #8 Remove the cover & keep cooking over low heat/flame, until most of the liquid has evaporated, stirring frequently, about 2 hrs.
  • Step #9 Serve hot or at about room temp.
  • Step #10 This keeps, covered tightly, in the fridge for up to 5 days.
