Peas In Tomato Sauce (revithia Me Saltsa Domata) Recipe

Ingredients
  • 1 tbsp extra virgin olive oil .
  • 1 medium zucchini, sliced .
  • 1/2 tsp sugar .
  • 1 c frozen peas .
  • 1 medium onion, sliced .
  • 1 tbsp tomato paste .
  • salt .
  • 1 tbsp fresh basil .
  • 1 c water .
  • 2 medium tomatoes, finely sliced or equivalent amount canned tomatoes, sliced .
  • 1 tbsp fresh oregano .
  • 1 garlic clove, finely sliced

Directions
  • Step #1 Remove peas from the freezer so that they can begin to thaw while the dish is simmering.
  • Step #2 Add olive oil & onions to a large skillet over med-heat/flame.
  • Step #3 Cook 2 or 3 mins until the onions soften a bit.
  • Step #4 Add the minced garlic & stir a min.
  • Step #5 Add the tomatoes (canned & paste), sugar, oregano, basil, & water to the onions.
  • Step #6 Continue to cook another 5 mins so that flavors begin to come together.
  • Step #7 Adjust seasonings as desired at this point.
  • Step #8 Add zucchini & cook 5 to 8 mins.
  • Step #9 The zucchini should be cooked but still firm.
  • Step #10 Add the thawed peas & stir again until the peas are warm, about 2 or 3 mins.
  • Step #11 Serve warm.
