Step #1 Remove peas from the freezer so that they can begin to thaw while the dish is simmering.
Step #2 Add olive oil & onions to a large skillet over med-heat/flame.
Step #3 Cook 2 or 3 mins until the onions soften a bit.
Step #4 Add the minced garlic & stir a min.
Step #5 Add the tomatoes (canned & paste), sugar, oregano, basil, & water to the onions.
Step #6 Continue to cook another 5 mins so that flavors begin to come together.
Step #7 Adjust seasonings as desired at this point.
Step #8 Add zucchini & cook 5 to 8 mins.
Step #9 The zucchini should be cooked but still firm.
Step #10 Add the thawed peas & stir again until the peas are warm, about 2 or 3 mins.
Step #11 Serve warm.
