Sticky Coconut Chicken Recipe

Ingredients
  • 6-8 boneless skinless chicken thighs .
  • 2 tsps hot chili flakes .
  • 3/4 c coconut milk (make sure & stir before measuring) .
  • 1 tbsp fresh minced ginger .
  • 1 tsp fresh ground pepper .
  • 3 tbsps soy sauce .
  • 1/2 c sugar .
  • 3/4 c rice vinegar

Directions
  • Step #1 Combine the rice vinegar, sugar, soy sauce & 1 t of chilli flakes.
  • Step #2 Bring to a boil, & boil until reduced to 1/2 c (about 10 mins).
  • Step #3 Use warm.
  • Step #4 Can be made up to 1 week ahead.
  • Step #5 Rinse & pat the chicken dry.
  • Step #6 Combine coconut milk, ginger, pepper & the rest of the chili flakes.
  • Step #7 Add chicken & marinate at least 1 hr, up to 24 hrs.
  • Step #8 Grill chicken, making sure to pull thighs open & lay flat on an oiled grill on high heat.
  • Step #9 Cook, turning as needed to brown on both sides, basting often with remaining marinade, until done - 10 - 12 mintues.
  • Step #10 Serve with chilli glaze & sticky rice.
