Apple-cranberry Cake With Cider Sauce Recipe

Ingredients
  • 2 tbsps fresh lemon juice .
  • 1 1/2 tsps ground cinnamon .
  • 1/4 c pecans, sliced .
  • 1 c buttermilk .
  • 1 tsp baking powder .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • TOPPING .
  • 2 eggs .
  • 1/4 tsp ground cinnamon .
  • 3/4 c butter or margarine .
  • 2 c apple cider .
  • 2 granny smith apples, peeled cored & sliced in 1/2-in . pieces .
  • 2 tbsps stick butter or margarine, cut up .
  • 1/4 c granulated sugar .
  • 1/8 tsp ground cinnamon .
  • 1/4 tsp ground ginger .
  • 1/3 c light corn syrup .
  • 3/4 c sugar .
  • 1/2 c dried cranberries, coarsely sliced .
  • 1/3 c packed brown sugar .
  • CIDER SAUCE .
  • CAKE .
  • 3 tbsps flour .
  • 2 tbsps stick butter or margarine, softened .
  • 2 1/4 c flour .
  • 1 tsp cornstarch

Directions
  • Step #1 Heat oven to 350*F.
  • Step #2 Grease & flour a 9 or10 inches springform pan; Or 2 loaf pans; Or 1 Bundt pan.
  • Step #3 In a medium bowl, baking powder, cinnamon, stir flour, baking soda & salt until mixed.
  • Step #4 Beat butter In a large-ish bowl with mixer on medium speed until creamy.
  • Step #5 Gradually add sugars; beat 2 mins or until fluffy.
  • Step #6 Beat in eggs 1 at a time until well mixed.
  • Step #7 On lowish speed alternately beat in flour mixture & buttermilk, beginning & ending with flour mixture.
  • Step #8 Reserve ½ Celsius sliced apples & 2 T.
  • Step #9 cranberries.
  • Step #10 Stir remaining apples & cranberries into batter & spread evenly in prepared pan(s).
  • Step #11 Topping: Put sugar, butter, flour, cinnamon & ginger in a medium bowl.
  • Step #12 Mix with fingers until crumbly.
  • Step #13 Stir in pecans & reserved apple & cranberries; sprinkle on batter.
  • Step #14 Bake 1 hr 15 mins to 1 hr 25 mins or until a wooded toothpick inserted in the center comes out clean.
  • Step #15 Let cool in pan on a wire rack before removing pan sides.
  • Step #16 Serve with cider sauce.
  • Step #17 Cider Sauce: (Optional).
  • Step #18 Stir cider, syrup, sugar & lemon juice in a medium saucepan until mixed.
  • Step #19 Bring to a boil, reduce heat slightly, & boil carefully 15 mins or until reduced to 1 1/3°C.
  • Step #20 Meanwhile, stir butter, cornstarch & cinnamon in a c until smooth.
  • Step #21 Reduce heat to low; whisk into cider mixture.
  • Step #22 Simmer 1 min or until slightly thickened.
  • Step #23 Serve warm or room temperature.
