Lemon Raisin Pie Recipe

Ingredients
  • 1/3 c white sugar .
  • 1/4 tsp salt .
  • 1/3 c brown sugar .
  • 3 large eggs, room temperature .
  • 1 1/2 tbsps grated lemon zest .
  • 2/3 c walnuts .
  • 1/2 c butter, room temperature .
  • 1 1/4 c golden raisins .
  • 1 single baked pie crust (lightly baked) .
  • 3/4 tsp cinnamon .
  • 1/2 c fresh lemon juice

Directions
  • Step #1 Prepare & LIGHTLY bake a pie shell; cool.
  • Step #2 In a small bowl soak raisins & lemon zest in the lemon juice for about 10 mins; add in the nuts.
  • Step #3 Using an electric mixer, cream butter, both sugars, cinnamon & salt until light & fluffy (about 3-4 mins).
  • Step #4 Add in eggs, & beat for about 30 seconds (the mixture will look curdled until it heats up in the oven).
  • Step #5 Stir in the raisin mixture, & mix with a wooden spoon until mix.
  • Step #6 Pour the filling into the semi-baked pie shell.
  • Step #7 Set oven to 350 degrees.
  • Step #8 Set oven rack to center position, & bake pie for about 35-40 mins, or until the top is set & light golden & darker golden around the edges (it will feel somewhat spongy to the touch).
  • Step #9 Cool completely on a wire rack before serving.
