Chicken Risotto Recipe

Ingredients
  • 1 lb chicken breasts, cut in strips .
  • 3 c chicken broth .
  • 3 green onions, sliced .
  • 1 tsp basil .
  • 1 garlic clove, minced .
  • 1/4 lb mushrooms, sliced .
  • 1 1/2 c uncooked rice .
  • 6 tbsps butter or margarine .
  • 1 c shredded cheddar cheese

Directions
  • Step #1 In large skillet melt 2 Tbsp of the butter.
  • Step #2 Add chicken & cook over med-heat/flame, until pieces are browned, stirring constantly, about 5 mins.
  • Step #3 Remove chicken from skillet.
  • Step #4 Add remaining butter, stirring constantly, until rice is lightly browned, rice & garlic to skillet & cook, about 5 mins.
  • Step #5 Add mushrooms & green onion.
  • Step #6 Continue cooking, stirring constantly, until mushrooms are tender, about 2 mins.
  • Step #7 Stir in chicken broth & basil.
  • Step #8 Bring to a boil; cover & let simmer 15 mins.
  • Step #9 Gently stir in the chicken.
  • Step #10 Continue simmering until chicken is heated through & rice is tender, about 5 mins.
  • Step #11 Top with cheese & serve as soon as possible.
