Ingredients
1/2 tsp almond extract .
1 c blanched almonds .
1/2 tsp baking powder .
powdered sugar (optional) .
1 1/4 c sugar, divided .
2 oz bittersweet chocolate, coarsely sliced .
1/4 c unsweetened cocoa .
1/4 c Splenda granular (or you can just increase the sugar) .
2 large eggs .
cooking spray .
5 large egg whites .
1 c low-fat milk (not skim) .
1 dash salt
Directions
Step #1 Place almonds in a food processor/blender; process until a you get a nut butter with small bits (about 3 1/2 mins).
Step #2 Scrape the bowl down half way through the processing time.
Step #3 Place half the almond butter, cocoa, eggs, Splenda, 3/4 c sugar, & egg whites in top half of a double boiler; stir well with a whisk.
Step #4 Add chocolate; cook over simmering water until chocolate melts & sugar dissolves.
Step #5 Remove from heat; add baking powder & almond extract.
Step #6 Stir with a whisk until smooth.
Step #7 Spoon batter into 12 muffin c coated with cooking spray.
Step #8 Chill 2 hrs.
Step #9 Place remaining almond butter & 1/2 c sugar in food processor/blender; pulse until mixd.
Step #10 Add milk & salt; process until smooth.
Step #11 Strain mixture through a sieve or cheesecloth into a small saucepan; discard solids.
Step #12 Bring to a boil.
Step #13 Reduce heat; simmer 4 mins or until thick.
Step #14 Remove from heat; pour this into a bowl.
Step #15 Cover up & chill in the fridge.
Step #16 Preheat oven to 450°.
Step #17 Bake cakes for nine mins or until almost set (centers should be a bit soft).
Step #18 Let cool in pan 5 mins.
Step #19 Invert each cake onto a dessert plate; drizzle with sauce.
Step #20 Garnish with powdered sugar, if desired.
