Ingredients
1 (8-14 lb) beef brisket .
2 tbsps chili powder .
2 tbsps brown sugar .
1/3 c kosher salt .
2 tbsps sugar .
1/4 c paprika .
2 tbsps ground pepper .
2 tbsps cayenne .
1 tbsp garlic powder .
1 tbsp onion powder .
3 tbsps cumin
Directions
Step #1 Trim the extreme excess fat from the brisket.
Step #2 Not too much though, fat is good for keeping this thing moist! Rinse the brisket & pat it dry with paper towels.
Step #3 Mix all the dry ingredients together in a bowl.
Step #4 Generously coat one side of the brisket with the rub.
Step #5 "Rub" it in with your hands really good.
Step #6 This is very important! Flip the brisket & repeat the process.
Step #7 Wrap the brisket in a few layers of plastic wrap.
Step #8 Then one layer of foil wrap.
Step #9 Put it in the fridge for about 24 hrs.
Step #10 Prepare your smoker for smoking or your grill for indirect heating.
Step #11 You are looking to have your cooking chamber between 225 & 240 degrees.
Step #12 When grill is up to temp, place the brisket on the rack & WAIT! Smoke the meat for about 1 1/2 hrs per lb.
Step #13 You are looking for an internal temp of 175-185 degrees at the thickest part of the brisket.
Step #14 I use Pecan wood chips for flavoring, Cherry, but feel free to use Hickory, or Apple as well.
Step #15 I never use Mesquite wood.
Step #16 Also, make sure you don't use "green" wood or it will taste horrible! Add a handful of soaked wood chips every 45 mins for the first 8 hrs.
Step #17 Some people like to "mop" a brisket.
Step #18 If you want to do this, do it during the second half of the process.
Step #19 Look for a mop recipe online if you want to do this.
Step #20 When it is done, wrap the brisket in foil wrap & let it stand for about 30 mins.
Step #21 Slice it against the grain & serve this with Rock & Roll BBQ sauce (on buns if you like).
Step #22 I realize this may be more work than you are looking for.
Step #23 BUT if you want REAL BBQ this is the way you gotta do it.
