Cheddar English Muffins Recipe

Ingredients
  • 1 tbsp vinegar .
  • 4 tbsps cornmeal, divided .
  • 1/2 c shredded cheddar cheese .
  • 2 tbsps canola oil .
  • 1 tsp salt .
  • 1 (1/4 oz) package active dry yeast .
  • 3/4 c warm water (120-130f) .
  • 1 egg .
  • 1 tbsp sugar .
  • 3-3 1/4 c bread flour

Directions
  • Step #1 In mixing bowl mix 2 c flour,sugar, yeast & salt.
  • Step #2 Add water & beat medium speed 2 mins.
  • Step #3 Add egg & vinegar.
  • Step #4 Beat on high for 2 mins.
  • Step #5 Stir in chesse & enough remaining flour to form a stiff dough.
  • Step #6 Turn onto floured surface kneading until dough is smooth & not sticky, about 2 mins.
  • Step #7 Roll to half inch thickness Cut with 3 inch round cutter.
  • Step #8 Grease baking sheet & sprinkle with 2 Tbsp cornmeal.
  • Step #9 Place muffins on sheet & cover with remaining cornmeal.
  • Step #10 Cover up & let rise til double, about 1 hr.
  • Step #11 Heat ungreased griddle or electric skillet to 325°F Cook muffins 20-25 mins, turning every 5 mins.
  • Step #12 Remove to cool Split & toast if desired.
