Caribbean Pumpkin Curry/colombo De Giraumon Recipe

Ingredients
  • 1/4 lb bacon, sliced .
  • 2 medium tomatoes, peeled & sliced .
  • 1 large garlic clove, crushed .
  • 1 medium onion, sliced .
  • salt .
  • 1/4 tsp ground cloves .
  • pepper, to taste .
  • 1 lb west indian pumpkin, Calabaza, cut into 1 inch cubes .
  • 1 green pepper, sliced .
  • 2 tbsps unsalted butter .
  • 2 tbsps vegetable oil .
  • 1 tsp curry powder

Directions
  • Step #1 Heat oil & butter in a heavy large saucepan,and green pepper & cook stirring from time to time,add the bacon,onion,until onion is tender but not browned.
  • Step #2 Add the curry powder & cook,stirring for a min or 2.
  • Step #3 Add the cloves,stir this to mix,cover & cook on the lowest possible heat,tomatoes,pumpkin,salt & pepper,stirring every once in awhile to prevent from burning.
  • Step #4 When the pumpkin is very tender & almost reduced to a puree,stir in the garlic & cook;uncovered for a min or 2 longer.
