1 lb west indian pumpkin, Calabaza, cut into 1 inch cubes .
1 green pepper, sliced .
2 tbsps unsalted butter .
2 tbsps vegetable oil .
1 tsp curry powder
Directions
Step #1 Heat oil & butter in a heavy large saucepan,and green pepper & cook stirring from time to time,add the bacon,onion,until onion is tender but not browned.
Step #2 Add the curry powder & cook,stirring for a min or 2.
Step #3 Add the cloves,stir this to mix,cover & cook on the lowest possible heat,tomatoes,pumpkin,salt & pepper,stirring every once in awhile to prevent from burning.
Step #4 When the pumpkin is very tender & almost reduced to a puree,stir in the garlic & cook;uncovered for a min or 2 longer.
