Cheesy Mexican Cornbread Recipe

Ingredients
  • 1 1/2 tsps salt .
  • 1 tbsp cumin .
  • 2 c milk or half-and-half cream .
  • 4 tbsps sugar .
  • 1 1/4 c grated cheddar cheese .
  • 1 1/2 c flour .
  • 5 tsps baking powder .
  • 2 eggs, beaten .
  • 2 1/2 c yellow cornmeal .
  • 1 (15 oz) can canned corn niblets, drained .
  • 1 tsp chili powder .
  • 1/2 c melted butter .
  • 1 (4 1/2 oz) can green chilies, sliced

Directions
  • Step #1 Set oven to 400F degrees.
  • Step #2 Butter a 13 x 9-inch baking pan.
  • Step #3 In a bowl mix first 7 ingredients; mix well.
  • Step #4 Add in drained corn & green chilies; mix to mix.
  • Step #5 In a small bowl, mix/whisk together milk, melted butter; add to the corn mixture along with the cheddar cheese; mix well to mix.
  • Step #6 Pour into prepared baking dish.
  • Step #7 Bake for about 20-25 mins, or until golden brown.
