Shrimp Mozambique, (camarao Mozambique) Recipe

Ingredients
  • 1 tsp turmeric .
  • 1/2 c red wine or light beer .
  • 1/2 tsp white pepper .
  • 1/2 c water .
  • 1/2 tsp saffron, toasted, crushed & soaked in 1 tbsp warm water for 15 mins .
  • 8 garlic cloves, finely sliced .
  • 2 tsps hot chili sauce (or generous pinch crushed red pepper) .
  • 1/4 c finely sliced onions .
  • 4 tbsps finely sliced coriander (or flat leaf parsley) .
  • 2 tsps fresh lemon juice .
  • 1 lb shrimp, peeled & deveined (26-30 count) .
  • 2 tsps kosher salt .
  • 4 tbsps butter

Directions
  • Step #1 Melt butter in a 3-quart pot over medium-low heart.
  • Step #2 Toss in onion & fry until lightly golden.
  • Step #3 Pour in the water followed by garlic, cilantro, turmeric, & saffron water.
  • Step #4 Cover up & let simmer for 3 to 4 mins, allowing the essence of the spices & herbs to mingle.
  • Step #5 Pour in the red wine or beer with the lemon juice.
  • Step #6 Stir.
  • Step #7 Cover up & raise heat to medium-high & bring the sauce to boil.
  • Step #8 Reduce the heat to medium-low & let simmer for 2 mins.
  • Step #9 Toss in the shrimp, hot peppers or chili sauce if using & give them a turn in the sauce.
  • Step #10 Cook for three mins over medium-low until the shrimp are just curled tender & turned pink.
  • Step #11 Spoon the shrimp into bowls & serve this with plenty of crusty bread to dip in the flavourful sauce.
  • Step #12 (This can also be served over rice!).
