Danish Ham - Viking Style Recipe

Ingredients
  • Vegetable Puree .
  • 3 tbsps brown sugar .
  • 3 tbsps fresh lemon juice .
  • 1/2 c butter, melted .
  • 5 cooking apples .
  • 2 bay leaves, crumbled .
  • 3 parsnips .
  • 1 (10-13 lb) ham, on the bone trotter & rind removed .
  • 3 tbsps freshly grated horseradish .
  • 3 pears .
  • honey .
  • 1 tbsp juniper berries, crushed .
  • 3 potatoes .
  • Apple & Pear Compote .
  • 2 sprigs thyme, leaves picked .
  • 12 oz beer (dark or ale is best & at least 3 bottles will be needed.) .
  • 1 celery root .
  • 5 pears .
  • Horseradish Cream .
  • kosher salt & freshly ground black pepper .
  • 6 jerusalem artichokes .
  • sea salt .
  • 3 apples .
  • 3 c thick sour cream .
  • Ham & marinade .
  • 2 c honey

Directions
  • Step #1 To prepare the ham:.
  • Step #2 Place the meat on a cutting board.
  • Step #3 Using a sharp knife, score the fat in a cross-hatch pattern, cutting all the way through to the meat.
  • Step #4 Put the ham In a large-ish roasting pan.
  • Step #5 Spread the honey over the ham.
  • Step #6 Combine the thyme, bay leaves, & juniper in a small bowl.
  • Step #7 Spice up the mixture with salt, & then rub it into the ham.
  • Step #8 Pour the beer over the ham.
  • Step #9 Cover up the pan & marinate the ham in the refrigerator for several hrs or overnight.
  • Step #10 Preheat the oven to 320 degrees F.
  • Step #11 To prepare the puree:.
  • Step #12 Note: The puree also calls for 2 salsify roots.
  • Step #13 Recipezaar doesn't recognize them, so it wouldn't allow me to include them in the ingredients.
  • Step #14 They are easily ommited.
  • Step #15 Especially since they are rather hard to find in this part of the world.
  • Step #16 After the ham has marinated, peel & dice all of the fruit & vegetables.
  • Step #17 Place the vegetables in the roasting pan around the ham.
  • Step #18 To cook the ham:.
  • Step #19 Roast the ham & vegetables, basting the meat frequently with the marinade & adding more beer & honey if the pan seems dry.
  • Step #20 Cook the vegetables until they are very tender, about 1 hr.
  • Step #21 Take the vegetables from the roasting pan & put them In a large-ish saucepan.
  • Step #22 Set the vegetables aside until the ham is cooked.
  • Step #23 Return the meat to the oven & continue roasting & basting until the meat is tender, about 3 more hrs.
  • Step #24 Take the ham out of the oven, cover it & set it aside to rest for 1 hr.
  • Step #25 To finish the puree:.
  • Step #26 Gently warm the vegetables over med-heat/flame.
  • Step #27 Mash them with the butter, & then season this with salt & pepper.
  • Step #28 Keep the puree warm until ready to serve.
  • Step #29 Note: If desired, the ham can be glazed with a mixture of honey & mustard just prior to slicing & serving.
  • Step #30 Horseradish Cream:.
  • Step #31 In a bowl, mix all the ingredients, adding more or less of each, to taste.
  • Step #32 Mix well & then chill in the refrigerator.
  • Step #33 Apple & Pear Compote:.
  • Step #34 Peel & core the apples & pears.
  • Step #35 Roughly chop the fruit.
  • Step #36 Place the fruit in a medium saucepan.
  • Step #37 Add about 1 inch of water.
  • Step #38 Cover up the pan & let simmer the fruit over low heat/flame until tender, about 20 mins.
  • Step #39 Add honey, to taste.
  • Step #40 Serve the compote warm or at about room temp.
  • Step #41 Glaze the ham if desired, & then slice it.
  • Step #42 Serve the ham with the puree, Horseradish Cream & Apple & Pear Compote, accompanied by grilled toast topped with mushrooms, if desired.
