Baked Cherry Tomatoes And Feta Recipe

Ingredients
  • 2/3 c fresh basil, cut chiffonade .
  • 2 lbs cherry tomatoes .
  • 1 loaf focaccia bread or French bread, heated .
  • 6 oz soft feta cheese .
  • 2/3 c olive oil .
  • 1-2 tbsp minced garlic

Directions
  • Step #1 Steep garlic in olive oil at least 1/2 hr.
  • Step #2 Preheat oven to 400F degrees F.
  • Step #3 Wash & stem tomatoes & cut them in half.
  • Step #4 Put tomatoes in a shallow baking dish, pour olive oil & garlic over & toss lightly.
  • Step #5 Bake 10 mins.
  • Step #6 Cut feta cheese into 1/2 inch chunks.
  • Step #7 Place Feta & basil in serving dish.
  • Step #8 Pour tomatoe mixture over chunks of cheese & slivered basil.
  • Step #9 Stir carefully.
  • Step #10 Serve with bread to mop up juices.
