Lite Bavarian Dessert Recipe

Ingredients
  • 1 (11 oz) can mandarin oranges in light syrup, drained .
  • 1 tbsp unflavored gelatin .
  • 1/4 c sugar .
  • 1 tsp vanilla extract .
  • 1 c low fat cottage cheese .
  • 1/4 tsp almond extract .
  • 1 3/4 c cold water .
  • 2 kiwi fruits, peeled, halved, & sliced .
  • 1 c instant nonfat dry milk powder .
  • 1/4 c cold water

Directions
  • Step #1 Soften gelatin in 1/4 c cold water in a small sauce pan for 5 mins.
  • Step #2 Cook over low heat/flame, stirring frequently, until gelatin dissolves.
  • Step #3 Set aside.
  • Step #4 Combine 1 3/4 c cold water, cottage cheese, vanilla, dry milk powder, sugar, & almond extract in container of food processor/blender or mixer.
  • Step #5 Process until smooth; add gelatin mixture, & process 10 to 15 seconds.
  • Step #6 Pour mixture into a bowl; chill until consistency of unbeaten egg white.
  • Step #7 Set aside several pieces of each fruit for garnish.
  • Step #8 Layer remaining fruit & gelatin mixture into six 8-oz dessert dishes.
  • Step #9 Top with reserved fruit.
  • Step #10 Chill until firm.
