Regas' Creamed Spinach Recipe

Step #1 Thaw & drain spinach using paper towels to absorb any remaining liquid.
Step #2 Place dry spinach in large casserole dish & set aside.
Step #3 Heat (do not boil) cream in saucepan over low-medium heat; set aside.
Step #4 Melt butter in large pot over medium high heat; add onion & garlic oil & saute until tender.
Step #5 Add hot water, chicken base, tabasco, salt & sour cream.
Step #6 Whisk until well mixed.
Step #7 Bring to a boil & stir in the hot cream.
Step #8 Place cornstarch in small bowl.
Step #9 Add water & stir this to dissolve cornstarch.
Step #10 Whisking continuously, add cornstarch mixture to boiling sauce.
Step #11 As sauce thickens, continue whisking to remove any lumps.
Step #12 Sauce should be smooth & thick.
Step #13 Add parmesan cheese & whisk to remove lumps.
Step #14 Add hot sauce to spinach & stir this to mix.
Step #15 Serve.
