Grilled Southwest Potato Salad Recipe

Ingredients
  • 2 tbsps vegetable oil, divided .
  • 4 green onions .
  • 2/3 c grape tomatoes, halved .
  • 1 lb fingerling potatoes, unpeeled .
  • 1 large jalapeno chile .
  • 1/4 tsp ground black pepper, divided .
  • 2 tbsps white wine vinegar .
  • 1/2 tsp salt, divided .
  • 1/2 tsp ground cumin, divided .
  • 2 tsps prepared mustard .
  • 2 tbsps cilantro, sliced .
  • 1/4 c sour cream

Directions
  • Step #1 Heat grill.
  • Step #2 Cut each potato crosswise into 2 to 4 pieces, depending on size.
  • Step #3 In shallow pan, 1/4 teaspon of cumin, stir this together 1 tbsp of oil, 1/4 tsp of salt & 1/8 tsp of pepper.
  • Step #4 Add potatoes; toss to coat.
  • Step #5 Add green onions & chile; toss to coat.
  • Step #6 Place potatoes & chile on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals; cover grill.
  • Step #7 Grill 8 to 12 mins or until evenly browned & tender, turning every 4 to 5 mins.
  • Step #8 Add green onions; grill, 4 mins or until browned & tender, uncovered, turning once.
  • Step #9 Place grilled vegetables in same shallow pan.
  • Step #10 When cool enough to handle, halve potato pieces if desired.
  • Step #11 Peel chile; remove veins & seeds (or leave for extra spicy hot salad).
  • Step #12 Chop.
  • Step #13 Slice green onions.
  • Step #14 Place potatoes, chile & green onions in large bowl.
  • Step #15 Add vinegar & remaining tbsp of vegetable oil, 1/4 tsp cumin, 1/4 tsp salt & 1/8 tsp ground pepper.
  • Step #16 Toss until well mixed.
  • Step #17 Cool to about room temp.
  • Step #18 Add tomatoes to potoat mixture; toss.
  • Step #19 In small bowl, stir this together sour cream, mustard & cilantro.
  • Step #20 Stir into potato mixture until thoroughly mixd.
  • Step #21 Serve at about room temp.
