Chocolate Chip Shortbread Cookie Logs Recipe

Ingredients
  • 2 c all-purpose flour
  • 3/4 c finely sliced walnuts
  • 1 tbsp shortening
  • 1/2 c sifted confectioners' sugar
  • 1 c butter, softened
  • 2 c miniature semisweet chocolate chips
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease cookie sheets.
  • Step #3 Cream together butter & confectioners' sugar until smooth.
  • Step #4 Stir in vanilla.
  • Step #5 Mix in the flour, & then one c of the chocolate chips.
  • Step #6 Shape dough into 2x1/2 inch logs.
  • Step #7 Place logs 2 inches apart on prepared cookie sheets.
  • Step #8 Bake for 10 to 13 mins in preheated oven, or until firm.
  • Step #9 Let cookies cool completely before removing from pan (shortbread is brittle).
  • Step #10 Melt the remaining 1 c chocolate chips & shortening over a double boiler, stirring frequently until smooth.
  • Step #11 Dip one end of each cookie into the chocolate, then into the nuts.
  • Step #12 Place onto waxed paper until set.
