Cranberry Torte Recipe

Ingredients
  • 3/4 c fresh or frozen cranberries
  • 1 1/2 c fresh or frozen cranberries
  • TOPPING:
  • 1 1/4 c sugar, divided
  • 1 tbsp orange juice concentrate
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 1/4 c graham cracker crumbs
  • 2/3 c water
  • 1 c whipping cream
  • 1/8 tsp salt
  • 6 tbsps butter or margarine, melted
  • 1/4 c finely sliced pecans
  • 1/2 c sugar

Directions
  • Step #1 In a bowl, pecans, mix the cracker crumbs, 1/4 c sugar & butter.
  • Step #2 Press onto the bottom & 1 in.
  • Step #3 up the sides of a 9-in.
  • Step #4 springform pan.
  • Step #5 bake this at 375 degrees F for 8-10 mins or until lightly browned.
  • Step #6 In a bowl, vanilla, orange juice concentrate, mix the cranberries, salt & remaining sugar.
  • Step #7 In a mixing bowl, beat cream until soft peaks form.
  • Step #8 Fold into the cranberry mixture.
  • Step #9 Pour into the crust.
  • Step #10 Freeze until firm.
  • Step #11 For topping, mix sugar & cornstarch in a saucepan.
  • Step #12 Stir in cranberries & water until mixed.
  • Step #13 Bring to a boil.
  • Step #14 Reduce heat; cook & stir until berries pop & mixture is thickened, about 5 mins; cool.
  • Step #15 Let torte stand at about room temp for 10 mins before slicing.
  • Step #16 Serve with topping.
