Tavern On The Green's Meatloaf Recipe

Ingredients
  • salt & fresh pepper, to taste .
  • 3/4 lb bacon, sliced into half-inch pieces .
  • 1 tbsp olive oil .
  • 1/2 c milk .
  • 1/2 c onions, finely sliced .
  • 1/8 tsp dried basil .
  • 1/4 tsp sugar .
  • 3 slices white bread, crust trimmed, bread torn into small pieces .
  • 1 garlic clove, minced .
  • 1 pinch nutmeg .
  • 1 egg .
  • 1 c parsley, finely sliced .
  • 1 c celery, finely sliced .
  • 1/8 tsp dried thyme .
  • 1/3 c ketchup .
  • 1 1/2 lbs ground beef .
  • 1/4 tsp Dijon mustard .
  • For the glaze .
  • 1/4 c tomato paste .
  • 3 tbsps worcestershire sauce .
  • For the meatloaf

Directions
  • Step #1 In a large bowl, beat together the eggs & milk.
  • Step #2 Add the torn bread & let it absorb the liquid for about 15 mins.
  • Step #3 Meanwhile, cook bacon (very crispy but not burnt) until most but not all of the fat is rendered.
  • Step #4 Drain & set aside to cool.
  • Step #5 Stir the bread mixture with a fork to mix.
  • Step #6 Add the remaining meatloaf ingredients, including the drained bacon, but not the beef, & mix thoroughly.
  • Step #7 Fold in the beef & mix to incorporate throughout, being careful to avoid mashing or overhandling the meat.
  • Step #8 Cover up bowl & put in the fridge overnight.
  • Step #9 When ready to cook, preheat your trusty oven to 375 degrees.
  • Step #10 Remove bowl from the refrigerator & shape meat into a loaf approximately 5 inches long & 3 inches high.
  • Step #11 Place in the middle of a low-sided baking pan & bake for 35 mins.
  • Step #12 In a small bowl, whisk glaze ingredients together.
  • Step #13 Brush meatloaf with glaze & bake for another 20 mins.
  • Step #14 Remove meat loaf from the oven & let it sit for a few mins before slicing & serving.
