Zucchini Ankara Recipe

Ingredients
  • 3-6 tbsps fresh lemon juice .
  • 2 c onions, sliced .
  • 1/4 c olive oil .
  • 1 tbsp ground cumin .
  • 3 zucchini, cut into 1/2 inch thick half-moons .
  • 1 pinch cayenne .
  • salt & pepper .
  • 1 c garbanzo beans, drained .
  • 1/2 c kalamata olives, sliced .
  • 3-4 garlic cloves, minced .
  • 1 tsp dried marjoram .
  • 1 c feta cheese, grated

Directions
  • Step #1 Saute the onions & garlic until onion is translucent.
  • Step #2 Add the zuccini & marjoram & cook on medium heat utnil squash is just tender.
  • Step #3 If too dry to simmer, add in 1/4 c water.
  • Step #4 This dish should be juicy.
  • Step #5 Add the garbanzos, lemon juice, olives, cumin, & seasonings.
  • Step #6 Continue to cook this until everything is heated.
  • Step #7 Don't let the zucchini get too soft.
  • Step #8 Adjust the lemon & herbs to your taste & ladle the vegetables over couscous or rice.
  • Step #9 Top with feta cheese.
