Step #2 In a small bowl mix the bread crumbs, salt, cumin, mint, & pepper, ginger, oil, Essence or seasoning salt, & mix well.
Step #3 Place the loins in a roasting pan & pat with the breadcrumb mixture to make a crust.
Step #4 Roast for 30 to 40 mins, or until a meat thermometer registers 125 degrees F for medium-rare.
Step #5 Transfer to a cutting board & let rest for 15 mins before carving.

Step #8 In a heavy saucepan, heat the oil over med-heat/flame.
Step #9 Add the onion & bell pepper, until soft, stirring, & cook, about 4 mins.
Step #10 Add the garlic, turmeric, ginger, salt & pepper flakes, cinnamon, pepper, & cook for 1 min, stirring.
Step #11 Add the berries, & vinegar & let simmer over low heat/flame until thickened & reduced, sugar, about 25 to 30 mins, stirring every once in awhile.
Step #12 Add the mint & cook 2 mins.
Step #13 Remove from the heat & cool to about room temp before serving.
