Ontario Lamb Loin With Saskatoon Berry Chutney Recipe

Ingredients
  • 3 c fresh saskatoon berries, rinsed & drained (about 2 pints) .
  • 1 c onions, sliced .
  • 2 tbsps vegetable oil .
  • 1 jalapeno pepper, seeds & stem removed, minced .
  • 2 tsps garlic, minced .
  • 1/2 tsp salt .
  • 1 tbsp brown sugar .
  • 1 tbsp fresh mint, minced .
  • 1/4 c balsamic vinegar (or apple cider vinegar) .
  • 1 c fine breadcrumbs .
  • 1/4 tsp red pepper flakes .
  • 1/2 tsp salt .
  • 1/4 tsp ground black pepper .
  • 1/4 c fresh mint, minced .
  • 2 tsps fresh ginger, minced .
  • 1/2 c green bell peppers, sliced .
  • 1/4 c brown sugar, plus .
  • 2 tsps seasoning salt (or Emeril Essence) .
  • 1 tsp turmeric .
  • saskatoonberry chutney .
  • 1/3 c extra-virgin olive oil .
  • 1 tsp ground cumin .
  • 2 (1 1/2 lb) lamb loin chops, trimmed & tied at 1-inch intervals .
  • 1 tbsp fresh ginger, minced .
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 425F degrees F.
  • Step #2 In a small bowl mix the bread crumbs, salt, cumin, mint, & pepper, ginger, oil, Essence or seasoning salt, & mix well.
  • Step #3 Place the loins in a roasting pan & pat with the breadcrumb mixture to make a crust.
  • Step #4 Roast for 30 to 40 mins, or until a meat thermometer registers 125 degrees F for medium-rare.
  • Step #5 Transfer to a cutting board & let rest for 15 mins before carving.
  • Step #6 Serve with Saskatoonberry Chutney.

  • Step #8 In a heavy saucepan, heat the oil over med-heat/flame.
  • Step #9 Add the onion & bell pepper, until soft, stirring, & cook, about 4 mins.
  • Step #10 Add the garlic, turmeric, ginger, salt & pepper flakes, cinnamon, pepper, & cook for 1 min, stirring.
  • Step #11 Add the berries, & vinegar & let simmer over low heat/flame until thickened & reduced, sugar, about 25 to 30 mins, stirring every once in awhile.
  • Step #12 Add the mint & cook 2 mins.
  • Step #13 Remove from the heat & cool to about room temp before serving.
