Chocolate Flan Recipe

Ingredients
  • 2 eggs, lightly beaten .
  • 1 (15 oz) can evaporated 2% milk .
  • 1 tsp almond extract .
  • 1 c 2% low-fat milk .
  • 2 tbsps unsweetened cocoa powder (heaping) .
  • 1 c Splenda sugar substitute .
  • 1 tbsp cornstarch

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Coat a 3-c flan mold with nonstick cooking spray.
  • Step #3 Whisk together eggs, Splenda, cocoa, cornstarch, & almond extract until smooth.
  • Step #4 Stir in milk & evaporated milk.
  • Step #5 Pour mixture into mold.
  • Step #6 Set mold in baking pan, & pour water into the pan until it reaches halfway up the mold so flan cooks evenly & doesn't crack.
  • Step #7 Bake 2 hrs (flan will not look completely set yet, will firm up more while cooling).
  • Step #8 Let cool at about room temp for 1 hr; then put in the fridge for several hrs before serving.
  • Step #9 To serve, invert mold onto a plate or spoon flan out of mold.
