Lamb Chops With Mint Jelly Crust Recipe

Ingredients
  • salt & freshly ground black pepper .
  • 8 lamb chops (I use mid-loin chops here in NZ) .
  • 2 tbsps mint jelly .
  • 1 c fresh white breadcrumbs

Directions
  • Step #1 Pre-heat the oven to 375'F/160'C.
  • Step #2 Place the lamb chops in a shallow baking pan & season this with the salt & pepper.
  • Step #3 Place the breadcrumbs in a bowl & mix in the mint jelly.
  • Step #4 Spoon the mixture onto the top of the chops, pressing it down firmly with the back of the spoon to make sure it sticks to the chops.
  • Step #5 Bake the chops for 20-30 mins or until they are cooked through.
  • Step #6 Serve as soon as possible.
