Buttermilk Maple Spice Cake Recipe

Ingredients
  • 1/3 c vegetable oil .
  • 1/2 c pure maple syrup .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 1/2 tsp ground ginger .
  • 1/2 c whole wheat flour .
  • 2 eggs, lightly beaten .
  • 1/4 tsp ground nutmeg .
  • 1/2 tsp ground cinnamon .
  • 1 tbsp blackstrap molasses .
  • 2/3 c buttermilk .
  • 1/4 tsp ground cloves .
  • 1 tsp baking powder .
  • 1 pinch cayenne .
  • 1 c all-purpose flour or whole wheat pastry flour

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Grease a 9-inch square baking pan.
  • Step #3 Sift the flours, cinnamon, baking soda, salt, baking powder, nutmeg, ginger, cloves, & cayenne into a large bowl.
  • Step #4 Set aside.
  • Step #5 In another bowl, maple syrup, oil, whisk together the eggs, buttermilk, & molasses until well mixed.
  • Step #6 Make a well in the dry mixture & carefully fold in the egg mixture, just until all is thoroughly moistened.
  • Step #7 Pour batter into the prepared pan & bake for 30 mins, until a toothpick inserted into the center comes out clean.
  • Step #8 Cool in the pan.
