Greek Meatballs In Tomato Yogurt Mint Sauce Recipe

Ingredients
  • 3/4 c fresh breadcrumbs .
  • 1 large egg, beaten .
  • 2 garlic cloves, minced .
  • fresh ground pepper .
  • 3/4 tsp salt .
  • 1/2 c plain nonfat yogurt, divided .
  • 1 tbsp sliced fresh mint .
  • 1 1/2 lbs ground lamb .
  • 1/4 c finely sliced yellow onions .
  • 1 tbsp sliced fresh parsley .
  • 1 (8 oz) can tomato sauce .
  • mint sprigs .
  • 1/2 tsp dried oregano

Directions
  • Step #1 In a mixing bowl, mix the egg, lamb, 1/4 c yogurt & the next 7 ingredients; mix well.
  • Step #2 Cover up & put in the fridge for 30 mins.
  • Step #3 Form lamb mixture into 1-inch meatballs; place on a rimmed baking sheet.
  • Step #4 Bake in a 400F degree oven for about 15 mins or until browned.
  • Step #5 Lower oven temperature to 350 degrees.
  • Step #6 Transfer meatballs to a 2 1/2 quart baking dish that has been coated with cooking spray.
  • Step #7 In a small bowl, remaining yogurt, whisk the tomato sauce, & mint; pour the sauce over meatballs.
  • Step #8 Cover up & bake 30 mins; uncover & bake this until bubbly (about 10 more mins).
  • Step #9 Garnish with mint leaves.
