South Beach Marinated Flank Steak Recipe

Ingredients
  • 1/4 tsp salt .
  • 3 garlic cloves, minced .
  • 1 small red onion, quartered .
  • 1/4 tsp fresh coarse ground black pepper .
  • 1/3 c balsamic vinegar .
  • 2 tbsps sliced fresh oregano .
  • 1/4 c capers, drained .
  • 1 1/2 lbs flank steaks

Directions
  • Step #1 Sliver 1/4 of the onion & set aside.
  • Step #2 Chop the rest of the onion.
  • Step #3 Mis it in a bowl with the vinegar, oregano, capers, & garlic.
  • Step #4 Combine 1/4 c of this mixture with the slivered onions & set aside.
  • Step #5 Sprinkle top both sides of the steak with teh salt & pepper; prick well with a fork.
  • Step #6 In a large zip-top bag, comvine the steak with the remaining onion mixture.
  • Step #7 Marinate for 1 hr to overnight.
  • Step #8 Heat the grill or broiler, positioning the oven brioler rack so that the meat on the rack in the pan is 4" fromt he heat source.
  • Step #9 Removethe meat from the marinade, & place on grill over direct heat or on an oven rack set in the broiler pan.
  • Step #10 Discard marinade.
  • Step #11 Grill or broil for 4-5 min per side for med rare.
  • Step #12 Let stand 5 min before slice.
  • Step #13 Place meat on a platter & pour the reserved onion mixture over the steak.
