Step #2 Slices oranges in half & scoop out pulp without breaking the orange rind.
Step #3 Reserve pulp for another use or discard.
Step #4 Place orange halves cut side up (like a bowl) on a wire rack on a baking sheet.
Step #5 Bake at 250F for 2 hrs until dry & hard.
Step #6 Let Cool.
Step #7 Kid Portion:.
Step #8 Pack brown sugar firmly into each orange half, mounding slightly.
Step #9 Arrange spices in the brown sugar to resemble beetles: use a cinnamon stick as the body, a nutmeg as the head, 2 allspice for the eyes (on each side of the head), & 6-8 cloves for the legs/feet.
Step #10 Cover up tightly with plastic wrap & store this in the refrigerator (I keep mine sealed in plastic & in the cboard).
Step #11 Directions for use:.
Step #12 Unwrap the beetle & drop into 1 1/2 quarts apple juice or cider.
Step #13 Simmer 30 mins.
Step #14 Strain whole spices & orange rind from cider to serve.
Step #15 May add 1/2 c of Brandy, & heat well.
Step #16 Store leftover cider in the refrigerator.
