Zucchini Marinara Soup With Peas And Shell Pasta Recipe

Ingredients
  • 1 c baby peas (fresh or frozen or thawed) .
  • 1/2 c small shell pasta .
  • 2 tbsps olive oil .
  • 2 c chicken broth .
  • 1 (2 oz) envelope tomato basil soup mix (Knorr) .
  • 2 garlic cloves, minced .
  • fresh grated parmesan cheese .
  • 4 c sliced zucchini (1/2-inch thick slices) .
  • 1 (14 1/2 oz) can sliced tomatoes, with juice .
  • 1/2 c sliced onions

Directions
  • Step #1 In a large soup pot, heat the olive oil over med-heat/flame.
  • Step #2 Add in onion; stir/satue for about 3 mins or until softened.
  • Step #3 Add in the garlic; stir/saute for 1 min.
  • Step #4 Add teh zucchini; stir/saute about 3 mins or until begins to soften.
  • Step #5 Add in the tomatoes & soup mix, stirring to mix.
  • Step #6 Bring to a boil & add the chicken broth, stirring up any browned bits from the bottom of the pan.
  • Step #7 Lower heat to medium-low; simmer for 15 mins.
  • Step #8 Add the peas & pasta; simmer another 10 mins or until pasta is tender.
  • Step #9 Serve in soup bowls; garnish with grated parmesan cheese, if desired.
