Piccadilly Cafeteria Carrot Souffle #1 Recipe

Ingredients
  • 1/2 lb margarine, softened .
  • 6 eggs .
  • confectioners' sugar .
  • 1 tbsp vanilla extract .
  • 3 1/2 lbs carrots, peeled & sliced .
  • 2 1/2 c sugar .
  • 1/4 c all-purpose flour .
  • 1 tbsp baking powder

Directions
  • Step #1 Cook carrots until soft, I boil mine.
  • Step #2 Drain well.
  • Step #3 While carrots are still warm, add sugar, baking powder & vanilla extract.
  • Step #4 Whip mixture well with electric mixer until smooth.
  • Step #5 Add flour & mix well.
  • Step #6 Whip eggs in a separate bowl & add to carrot mixture & mix in well.
  • Step #7 Add softened margarine & mix well.
  • Step #8 Pour mixture into 13 x 9 pan, 1/2 full because mixture will rise.
  • Step #9 Bake at 350 degrees for about 1 hr & until top is light golden brown.
  • Step #10 Sprinkle top lightly with confectioners sugar.
