Ingredients
1/2 lb margarine, softened .
6 eggs .
confectioners' sugar .
1 tbsp vanilla extract .
3 1/2 lbs carrots, peeled & sliced .
2 1/2 c sugar .
1/4 c all-purpose flour .
1 tbsp baking powder
Directions
Step #1 Cook carrots until soft, I boil mine.
Step #2 Drain well.
Step #3 While carrots are still warm, add sugar, baking powder & vanilla extract.
Step #4 Whip mixture well with electric mixer until smooth.
Step #5 Add flour & mix well.
Step #6 Whip eggs in a separate bowl & add to carrot mixture & mix in well.
Step #7 Add softened margarine & mix well.
Step #8 Pour mixture into 13 x 9 pan, 1/2 full because mixture will rise.
Step #9 Bake at 350 degrees for about 1 hr & until top is light golden brown.
Step #10 Sprinkle top lightly with confectioners sugar.
