Shrimps In Cheese Sauce Recipe

Ingredients
  • 1/2 lb cream cheese, room temperature .
  • 2 tbsps finely sliced onions .
  • 2 1/2 tbsps cornflour .
  • 1 tsp black pepper, freshly ground or 1/2 tsp Tabasco sauce .
  • seasoning salt .
  • 2 lbs large shrimp, cleaned, headless .
  • 1/2 lb blue cheese, room temperature .
  • 2 crushed sliced garlic cloves .
  • olive oil or butter .
  • 14 fluid oz dry white wine (3/4 c) .
  • 2 tbsps finely sliced parsley

Directions
  • Step #1 Fry the shrimps lightly in a film of hot butter, or a mixture of olive oil & butter.
  • Step #2 Do this in batches.
  • Step #3 As soon as they turn pink & curl up, drain & keep aside.
  • Step #4 Mix the cornflour smoothly into a little of the cream cheese, then mix in the rest of the cream cheese.
  • Step #5 Grate the blue cheese if firm (otherwise mash it) & mix with the cream cheese in a bowl.
  • Step #6 Add next 4 ingredients, mix well, then stir in the the wine.
  • Step #7 The wine should be of very good quality, because acidic plonk will spoil the taste of the dish.
  • Step #8 Whisk to mix everything well together.
  • Step #9 Melt this cheese-wine mixture in a saucepan, stirring constantly.
  • Step #10 Watch closely: it should JUST reach boiling point & thicken slightly, otherwise it could curdle.
  • Step #11 Remove from heat, & stir in the the fried shrimps.
  • Step #12 Taste for seasoning: as blue cheese is salty, you should use your own discretion with the salt.
  • Step #13 Add pepper or Tabasco to taste: it doesn't have to be the exact quantity stated above.
  • Step #14 Serve in small heated bowls (ramekins will do).
  • Step #15 Garnish each with sliced chives or garlic chives & a few halves of de-pitted olives or a tomato slice.
  • Step #16 (Try serving this in pre-prepared baked phyllo pastry c! Fish can be substituted for the shrimps, but it must be a firm-fleshed type.
  • Step #17 You could also try crabsticks).
