Chinese Prawn Cakes With Sweet Chilli Sauce Recipe

Ingredients
  • 2 c fresh breadcrumbs .
  • sweet chili sauce, to serve .
  • 300F g raw prawns .
  • salt & pepper .
  • 1/4 c coriander, sliced .
  • 2 spring onions, finely sliced .
  • vegetable oil .
  • 300F g white fish fillets, cubed .
  • 2 eggs, lightly beaten

Directions
  • Step #1 Place fish & prawns in processor.
  • Step #2 Chop to chunky paste.
  • Step #3 Remove to bowl.
  • Step #4 Stir in onions, coriander & breadcrumbs.
  • Step #5 Spice up.
  • Step #6 Moisten your hands, & form mixture into small cakes.
  • Step #7 Heat a little vegetable oil in pan or wok & cook cakes in batches until golden brown on both sides.
  • Step #8 Drain on paper towels.
  • Step #9 Serve with sweet chilli sauce for dipping.
