Zucchini Chocolate Orange Cake Recipe

Ingredients
  • 1 tbsp orange zest .
  • 2 c white sugar .
  • 1 tsp ground cinnamon .
  • 2 1/2 tsps baking powder .
  • 1/4 c orange juice .
  • 1 tsp vanilla extract .
  • 3 c grated zucchini .
  • 1 tsp salt .
  • 1/2 c unsweetened cocoa powder .
  • 2 1/2 c all-purpose flour .
  • 2 tsps vanilla extract .
  • 1/2 c milk .
  • For the Cake .
  • 1 1/4 c confectioners' sugar .
  • 3 eggs, beaten .
  • For the Glaze .
  • 1 1/2 tsps baking soda .
  • 1 c sliced walnuts .
  • 3/4 c butter

Directions
  • Step #1 To make the cake:.
  • Step #2 Preheat oven to 350 degrees F Grease & flour Bundt pan.
  • Step #3 In a medium bowl, baking powder, baking soda, sift flour, cocoa, salt & cinnamon.
  • Step #4 Set aside.
  • Step #5 In a large bowl, cream butter & sugar until fluffy.
  • Step #6 Add eggs, 1 tsp vanilla & milk to the butter mixture.
  • Step #7 Stir in dry ingredients & mix until well mixed.
  • Step #8 Fold in zucchini, orange zest & nuts.
  • Step #9 Pour into a greased & floured Bundt cake pan.
  • Step #10 Bake at 350 degrees F for 50 to 60 mins, or until a toothpick inserted into center of cake comes out clean.
  • Step #11 Allow to cool.
  • Step #12 To make the glaze: In a small bowl mix together sugar, orange juice & vanilla.
  • Step #13 Invert cake onto serving dish, then drizzle glaze over.
