Blueberry Yogurt Pie Recipe

Ingredients
  • 1 c plain yogurt .
  • Filling .
  • 3 tbsps sugar .
  • 1 egg .
  • 2 c blueberries, fresh or frozen .
  • 1/4 c sugar .
  • 3 tbsps fresh lemon juice .
  • 1 tsp vanilla extract .
  • 1/2 tsp baking powder .
  • 1 c flour .
  • Crust .
  • 1/3 c butter or margarine .
  • 2 eggs

Directions
  • Step #1 Butter & flour a 9 inch pie pan.
  • Step #2 Preheat over to 350°F.
  • Step #3 For the crust: Cream the butter & sugar.
  • Step #4 Add the egg & mix well.
  • Step #5 Combine the flour & baking powder & mix them into the wet ingredients to form a soft dough.
  • Step #6 With floured fingers, pat the sticky dough into the bottom of the pie pan.
  • Step #7 Push the dough up the sides of the pan.
  • Step #8 Refrigerate as you make the filling.
  • Step #9 Filling: Mix all the filling ingredients, except the blueberries until smooth.
  • Step #10 Put the berries into the pie shell & carefully pour in the filling so the berries are coated & evenly distributed.
  • Step #11 Bake for 50-60 mins until the crust is browned & the custard has set.
  • Step #12 Chill well.
