Bobotie Recipe

Ingredients
  • 3 large eggs .
  • 1 c white breadcrumbs .
  • 1/2 c oil, your preference .
  • 4 tbsps turmeric .
  • 1 large onion, sliced .
  • 1/2 c red wine vinegar .
  • 1 tbsp salt .
  • 1 c water .
  • 1 kg lean ground beef .
  • 1 1/4 c milk .
  • 4 bay leaves .
  • 1/2 c beef stock .
  • 1/2 c fruit chutney .
  • 1/2 c sugar .
  • 1 granny smith apples, grated .
  • 1/4 c seedless raisins .
  • 5 tbsps curry powder, mild

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Sautee onion in heated oil until translucent.
  • Step #3 Add mince & bay leaves & stir-fry until brown.
  • Step #4 Mix curry powder, vinegar, salt, turmeric, sugar, water & beef stock & add to mince mix.
  • Step #5 Bring to boil.
  • Step #6 Add breadcrumbs, grated apple, chutney & raisins & stirr continuously until cooked, approximately 5 min.
  • Step #7 Beat eggs & milk together.
  • Step #8 Add half of egg/milk custard to mince mix & stir through.
  • Step #9 Spoon mince mix into buttered ovenproof dish & smooth top.
  • Step #10 Pour remaining egg/milk custard over top of mince mix & bake in preheated oven at 180C until custard has set & golden brown, approximately 30 min.
  • Step #11 Serve with yellow rice & chutney.
