Chicken Salad With Raspberry Vinaigrette Recipe

Ingredients
  • 1 tbsp Dijon mustard .
  • 1 pink grapefruit (peeled & sectioned) .
  • 2 tbsps olive oil .
  • sliced green onions .
  • 1 tbsp honey .
  • 2 tbsps lemon juice .
  • 1 c raspberries (optional) .
  • 4 boneless skinless chicken breasts .
  • 2 oranges (peeled & sliced) .
  • 1 garlic clove, minced .
  • 1 (10 oz) package red frozen raspberries (thawed) .
  • pepper .
  • salt .
  • 3 c bagged mixed salad greens

Directions
  • Step #1 For vinaigrette, in a mixer mix frozen raspberries, olive oil, lemon juice & garlic.
  • Step #2 Cover up & process until smooth.
  • Step #3 Cover up dressing & put in the fridge until ready to serve.
  • Step #4 In a large bowl mix the bagged lettuce.
  • Step #5 Combine dijon mustard, honey, salt & pepper in small bowl & then set aside.
  • Step #6 Grill chicken on for about 15min.
  • Step #7 or until tender & center of chicken is not pink.
  • Step #8 During the last 2min.
  • Step #9 of cooking brush the dijon mixture over chicken.
  • Step #10 Take chicken off of grill & cool slightly.
  • Step #11 When cool enough to handle cut into slices.
  • Step #12 On each salad plates arrange lettuce.
  • Step #13 Top with chicken slices, orange slices, grapefruit sections & sprinkle with green onions.
  • Step #14 Drizzle with vinaigrette.
