Root Vegetable Fritters Recipe

Ingredients
  • 1 c grated parsnips .
  • 1/2 c grated parmesan cheese .
  • 2 tbsps finely sliced flat leaf parsley .
  • 3 1/2 c grated sweet potatoes .
  • 200 g soft fresh goat cheese or fresh ricotta cheese .
  • 1/2 c plain flour (all purpose) .
  • 3 eggs, lightly beaten .
  • 1 c grated carrots .
  • sea salt .
  • cracked pepper .
  • olive oil or vegetable oil (for cooking)

Directions
  • Step #1 Place the flour in a bowl.
  • Step #2 Add the eggs & whisk until mixd & smooth.
  • Step #3 Add the parmesan, carrot, sweet potato, parsnip, salt & pepper plus any changes you want to make & mix to mix well.
  • Step #4 Heat a large non-stick frying pan over med-heat/flame, add a little oil & 2 tbsps of fritter mixture.
  • Step #5 Flatten the mixture & cook for 2-3 mins each side until golden.
  • Step #6 Repeat with the remaining mixture.
  • Step #7 Sandwich fritters together with the goat cheese or ricotta & serve this with a rocket salad, or leaves of your choice.
