Cube Steak Parmigiana Recipe

Ingredients
  • 1 (15 oz) can tomato sauce
  • 1/3 c finely crushed saltines
  • SAUCE:
  • 6 (4 oz) cube steaks
  • 1 egg
  • 3 tbsps all-purpose flour
  • 1/3 c grated Parmesan cheese
  • 1/2 tsp dried oregano, divided
  • 1/4 tsp pepper
  • 1 tbsp water
  • 1/2 tsp salt
  • 1 garlic clove, minced
  • 3 slices mozzarella cheese, halved
  • 1/2 tsp dried basil
  • 2 tbsps vegetable oil
  • 1 tbsp sugar
  • 1/3 c grated Parmesan cheese

Directions
  • Step #1 In three shallow bowls, mix flour, salt & pepper; beat egg & water; & mix Parmesan cheese, saltines & basil.
  • Step #2 Dip steaks in flour mixture & egg mixture, then roll in cheese mixture.
  • Step #3 In a large skillet, heat 1 tbsp of oil over medium-high heat.
  • Step #4 Brown three steaks on both sides.
  • Step #5 Remove to a greased 13-in.
  • Step #6 x 9-in.
  • Step #7 x 2-in.
  • Step #8 baking pan.
  • Step #9 Repeat with the remaining steaks, adding extra oil as needed.
  • Step #10 Bake, uncovered, at 375 degrees F for 25 mins.
  • Step #11 Drain any pan juices.
  • Step #12 Combine the tomato sauce, sugar, garlic & 1/4 tsp of oregano; pour over steaks.
  • Step #13 Bake 20 mins longer.
  • Step #14 Place mozzarella cheese on steaks.
  • Step #15 Sprinkle top with Parmesan & remaining oregano.
  • Step #16 Return to the oven for 5 mins or until cheese is melted.
