Khai Luk Koei (son-in-law Eggs) Recipe

Ingredients
  • 1/2 tsp cornstarch, dissolved in .
  • 1/4 c tamarind pulp, soaked in .
  • 3 medium shallots, thin sliced .
  • 3/4 tsp salt .
  • 4 hard-boiled eggs, Peeled .
  • 1 c vegetable oil .
  • shredded fresh chili peppers (to garnish) .
  • 1/2 c warm water .
  • coriander sprigs (to garnish) .
  • 2 dried red chili peppers .
  • 3 tbsps palm sugar .
  • 2 tsps water

Directions
  • Step #1 Soak dried chilis in warm water to cover untill just softened.
  • Step #2 drain & discard water.
  • Step #3 finely shred chilis & set aside.
  • Step #4 strain tamarind pulp save juice.
  • Step #5 In a small sauce pan large enough to fit the eggs, heat oil over medium-high heat.
  • Step #6 carefully add eggs & fry 1-2 mins turning carefully, untill golden brown.
  • Step #7 Remove with slotted spoon to paper towels to drain.
  • Step #8 Remove all but 2 tablesppons of oil frompan.
  • Step #9 add 2/3 of teh shallots & stir-fry1-2 mins or untill crispy.
  • Step #10 remove with slotted spon to paper towel to drain.
  • Step #11 add chilis & stir-fry 30 seconds or until crispy.
  • Step #12 remove with slotted spoon to paper towle to drain.
  • Step #13 remove all but 1 tbspfrom pan.
  • Step #14 add in the remaining shallot adn stir-fry 1 min.
  • Step #15 add tamarind juice & salt, bring to a boil.
  • Step #16 add sugar adn cook stiring constantly untill just mixd.
  • Step #17 Add corn starch mixture & cook 1 min or untill slightly thickened.
  • Step #18 Halve eggs & place on a small platter.
  • Step #19 sprinkle with fried shallots & chilis.
  • Step #20 Drizzle teh sauce over eggs & garnish with fresh chili adn coriander sprigs.
