Crispy Cornmeal Drop Doughnuts Recipe

Ingredients
  • 1/2 c buttermilk
  • 1 egg
  • 1/2 c self-rising cornmeal mix
  • sugar (optional)
  • cinnamon (optional)
  • 1/4 c sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • peanut or corn oil for frying
  • 3/4 c self-rising flour

Directions
  • Step #1 Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Step #2 In a bowl, cinnamon, sugar, cornmeal mix, mix the flour, & nutmeg.
  • Step #3 In a separate bowl, beat the egg together with the buttermilk.
  • Step #4 Gradually add the egg mixture to the dry ingredients, stirring with a fork or whisk until only slightly lumpy.
  • Step #5 Be careful not to overmix.
  • Step #6 Carefully drop batter by the rounded tspful into hot oil, & fry until golden brown.
  • Step #7 Drain & cool on a paper towel-lined plate.
  • Step #8 Roll balls in a small amount of cinnamon mixed with sugar, if desired, or just enjoy plain!.
