2-3 green onions, sliced (use only green onions) .
2 tbsps whipping cream, unwhipped .
lemon pepper (optional) .
1 egg, slighty beaten .
2 c cooked salmon (can use canned or fresh cooked salmon, I like leftover cooked cold salmon!) .
1 tbsp prepared horseradish .
LEMON AIOLI .
1 tsp dried dill .
1/4 tsp cayenne pepper (or to taste) .
1 lemon, juice & zest of .
4 tbsps butter .
1-2 minced fresh garlic clove (or to taste)
Directions
Step #1 In a bowl mix the salmon, egg, dry breadcrumbs, Worcestershire sauce, dill, green onions, celery, mayo, thyme, cayenne, salt & lemon pepper (if using) mix well to mix.
Step #2 Shape into 7 or 8 salmon cakes.
Step #3 Melt the butter with the oil in a heavy skillet.
Step #4 Brown salmon cakes on both sides (about 5 mins per side).
Step #5 Place on a dish or a serving platter lined with mixed greens.
Step #6 To make the lemon aioli: mix all ingredients together.
