3-color Salad With Maple Vinaigrette Recipe

Ingredients
  • 1 lb roasted peppers .
  • 2 lbs snow peas .
  • 1 1/2 oz sea salt .
  • 29 oz sunflower oil .
  • 9 oz old-fashioned prepared mustard .
  • 1/2 lb sunflower seeds .
  • 1 c maple vinaigrette .
  • 19 oz cider vinegar .
  • 2 lbs carrots .
  • 38 1/2 oz maple syrup

Directions
  • Step #1 Peel carrots & cut into sticks 4 inches by 1/2-inch.
  • Step #2 Cook snow peas & carrots for 1 min in the steamer & cool in cold water.
  • Step #3 Cut the roasted peppers into slivers.
  • Step #4 Mix together vegetables with Maple Vinaigrette & sunflower seeds.
  • Step #5 Maple Vinaigrette:.
  • Step #6 Mix together mustard, vinegar, & salt, maple syrup, process in mixer.
  • Step #7 To emulsify, add oil in a fine stream while continuing to process in the mixer.
