Chicken Marsala Florentine Recipe

Ingredients
  • 1 c Marsala wine
  • salt & pepper to taste
  • 4 boneless, skinless chicken breast halves
  • 2 tbsps olive oil
  • 1/4 c all-purpose flour
  • 3 c sliced portobello mushrooms
  • 1 tbsp dried oregano
  • 3/4 c butter
  • 1/2 c packed fresh spinach
  • 3/4 c sun-dried tomatoes

Directions
  • Step #1 Place chicken breasts between two pieces of wax paper, & lb to 1/4 inch thick with a meat mallet.
  • Step #2 Dust chicken with flour, salt , pepper & oregano.
  • Step #3 In a skillet, fry chicken in olive oil over med-heat/flame.
  • Step #4 Cook until done, turning to cook evenly.
  • Step #5 Set aside, & keep warm.
  • Step #6 In the same pan, melt the butter over med-heat/flame; add mushrooms, sun-dried tomatoes, & Marsala wine.
  • Step #7 Cook for approximately 10 mins, stirring every once in awhile.
  • Step #8 Mix in spinach, & cook for about 2 mins.
  • Step #9 Serve over chicken.
