Step #1 In a colander with a plate underneath, mix sliced eggplant & zucchini with salt & allow to sit for 30 mins; then rinse & drain well.
Step #2 Cook pasta according to directions & drain; meanwhile saute eggplant, zucchini, & onion in oil until tender.
Step #3 Add the tomatoes, sugar, garlic powder, salt & pepper & bring to a boil; reduce heat & let simmer for 3 mins, oregano, tomato paste, basil, stirring every once in awhile.
Step #4 Put cooked pasta in an 8x8 baking dish; top this with veggie mixture & sprinkle with mozzarella cheese.
Step #5 Broil in oven until cheese is melted & lightly browned, about 2-4 mins.
