Ratatouille Pasta Recipe

Ingredients
  • 1/4 tsp sugar .
  • 1 c sliced onions .
  • 1 tbsp olive oil .
  • 1/2 tsp dried basil .
  • 2 c sliced zucchini .
  • 1 (14 1/2 oz) can sliced tomatoes, undrained .
  • 1 1/3 c uncooked spiral shaped pasta .
  • 1/2 tsp salt .
  • 2 c sliced peeled eggplants .
  • 2-3 tbsps tomato paste .
  • 1/2 tsp garlic powder .
  • 1 dash black pepper .
  • 1 c shredded part-skim mozzarella cheese .
  • 1 tsp dried oregano

Directions
  • Step #1 In a colander with a plate underneath, mix sliced eggplant & zucchini with salt & allow to sit for 30 mins; then rinse & drain well.
  • Step #2 Cook pasta according to directions & drain; meanwhile saute eggplant, zucchini, & onion in oil until tender.
  • Step #3 Add the tomatoes, sugar, garlic powder, salt & pepper & bring to a boil; reduce heat & let simmer for 3 mins, oregano, tomato paste, basil, stirring every once in awhile.
  • Step #4 Put cooked pasta in an 8x8 baking dish; top this with veggie mixture & sprinkle with mozzarella cheese.
  • Step #5 Broil in oven until cheese is melted & lightly browned, about 2-4 mins.
